We all know that chicken is one of the staple foods for clean eating but it can get a bit boring after a while. This delicious recipe looks just like chicken nuggets but tastes far better AND it’s super healthy.

Ingredients:

580g chicken breast (cut into strips)

200g cashew nuts

2 tsp garlic paste (or you can use chilli paste if you like a little spice) – check either paste is gluten-free

4 tsp skimmed milk

Method:

Line a baking tray with parchment paper

Preheat the oven to 200 degrees

Crush the cashew nuts to your desired size; you can do this by placing the cashew nuts into a tea towel and bashing with a rolling pin (which helps to relieve frustration), then pour into a shallow bowl

Mix the garlic paste and milk together in a shallow bowl until the consistency is thick enough to cover the chicken strips, but thin enough to not sit in sticky piles on the chicken

One piece at a time, dip the chicken strips into the garlic mixture coating them thoroughly, roll them around in the cashew nuts, then place onto the baking tray

Repeat for all of the chicken strips

Place into the oven and leave for approx. 30-45 minutes, dependent on your oven

To determine when the chicken is cooked, select one strip (the thickest one) and cut it open; if the inside is white (not pink) and doesn’t have loads of juice dripping from it then the chicken is cooked

I serve these over a bed of kale for lunch, or with sweet potato and vegetables for dinner. They taste amazing! I’m proud to say that I created this recipe!

The fact that they look unhealthy means that it’s also easier to feed them to your children (as long as they don’t have nut allergies obviously), because they will be convinced that they’re eating (their beloved) fast food, while you know they are actually eating something that’s good for them.
