If you haven’t already noticed from my previous recipes, I’m a huge fan of making healthy treats to share with you. I have a major sweet tooth and love finding ways to satisfy cravings without breaking my clean eating too often.

My latest creation combines two of my favourite recipes – the base of my sugar-free banoffee pie and my chocolate orange avocado mousse.

I also wanted an excuse to use my pretty new jar, so decided to mix the two recipes and make a delicious (if I do say so myself) chocolate orange sharing pot.

You could obviously make this using a nice bowl or glass though, if you don’t have a jar.

Serves 2-4 (depending how much you want)

Ingredients

50g gluten-free oats

45g cashew nuts

60g pitted dates

10-20mls water

2 medium ripe avocados

35g cacao powder (you can substitute for cocoa powder)

2 tbsp honey

1/4 tsp orange extract

2 tbsp coconut milk

Greek yoghurt to top (approx. 50g)

 

Method

Base layers

Preheat the oven to 180c

Put the oats on a baking tray lined with baking paper and place in the oven for 5 minutes

While the oats are in the oven, smash the cashew nuts into small pieces (I do this by wrapping them in a tea towel and hitting it with a rolling pin)

Put 60g of dates into a food processor with a little water (about 10mls) and blend until there are no longer any big chunks – it doesn’t need to be completely smooth though

Remove the oats from the oven and (once cooled) use your hands to bind the oats, dates and cashew nuts together

Chocolate orange mousse layers

NB: I used a food processor with the mixer/whisk attachment but you can whisk by hand

Place the avocado, coconut milk, orange extract, cacao powder and honey in the food processor bowl and mix together until smooth, ensuring all avocado lumps have blended into the mixture

Once mixed, scoop half of the mixture into the jar

Then scoop the remainder of the base mixture into the jar, followed again by the mousse mixture

Top with Greek yoghurt and some grated chocolate (if you fancy) – I used Green & Black’s 85%

Place in the fridge to set (for at least 2-3 hours to get the best set, but it can be eaten sooner if you can’t wait)
