Protein pancakes are a great way to get a good amount of protein from a meal that looks and tastes like a treat…and they’re filling too! Plus, you get to have pancakes for breakfast!
My recipe only takes a few minutes and although I’ve included protein powder as an ingredient the recipe also works without the protein powder (if you don’t want to use any). It tastes great either way, but you may want to add some cinnamon or vanilla extract for more flavouring – oh, and they obviously won’t have as much protein in them!
Serves 1
Ingredients
1 medium banana
1 egg
1 egg white – I use 30ml Bulk Powders’ liquid egg whites as it’s easier than separating eggs in a morning rush
30g gluten-free oats
1 scoop whey protein powder – whatever flavour you like (I used NutriStrength whey protein isolate with the chocolate flavouring for these)
Dab of coconut oil (for the frying pan)
Method
Mash the banana with a fork in a bowl
Add all of the ingredients to the mashed banana and mix well using the fork
Put the frying pan on the hob and melt the coconut oil in the pan
Carefully scoop a ladle full of the mixture into the pan – do as many scoops as will fit in your pan
Leave to cook on one side for approx. 1 minute – when bubbles/holes start to appear in the mixture in the pan, it’s ready to turn over
Turn the pancakes over using a spatula and leave to cook on the other side for approx. 40 seconds
Remove from the pan and decorate however you want – or eat them plain
*My favourite topping is Greek yoghurt with berries (and a little honey occasionally), but this photo is from pancake day, when I made double the mixture (without protein powder) and drizzled loads of Green & Blacks 85% chocolate over them).*
