It may only be February, but I’m already counting down the days to summer. And this little tropical smoothie bowl recipe is a result of my desperation for warmer weather.

If you close your eyes and whack up the heating while eating this it almost feels like you’re on a tropical island. Almost.

Ingredients

100g frozen mango

100g frozen pineapple

100g frozen banana

100-150ml coconut milk – I use Koko unsweetened milk

Optional: Blueberries, raspberries, fresh sliced banana and desiccated coconut for toppings

Method

Blitz all of the ingredients in a Nutribullet or smoothie maker, starting with 100ml of the coconut milk – this might take a little while as most of the ingredients are frozen

Add the remaining 50ml coconut milk if needed – sometimes I need 100ml and other times I need more (because clearly, my smoothie maker decides how much effort it feels like putting in each time)

Once everything is blitzed, scoop the tropical smoothie mixture into a bowl. Then decorate with toppings of your choice.
